250 gm fat bacon
salt & pepper
1 tspn Worcester sauce
Nutmeg
1 tspn mustard
1 tblspn tomato sauce
2 cups fresh breadcrumbs Plus extra for coating (optional)
1 beaten egg
Mince bacon and add all ingredients and mix well.
Make into a roll and either cook traditionally as mum did by placing the mixture into a boiled and well floured cloth and steaming for 2 hours, or, and this is my way of cooking this sausage, roll the mixture tightly into a piece of (strong or doubled) aluminium foil, twist the ends firmly to make a compact sausage shape, and bake in a mod. oven for about 1.5 hrs.
Remove from cloth or foil while still hot and roll the cooked sausage in soft fresh breadcrumbs to coat. This is an optional step, but for me takes this recipe instantly to summer picnics and is a requirement!
Slice and eat cold. Great in sandwiches, especially with some tomato relish, or mustard.
